Roasted Whole Chicken Stuffed with Carrots, Raisins, Bacon, Onions, and Cassava Flour

Ingredients for 4 to 6 people:

  • 1 whole chicken, 2 tsp of salt,

  • 1 tsp of paprika,

  • 1 tsp of pepper,

  • 4 tbsp of butter,

  • 4 cloves of garlic,

  • 4 medium carrots,

  • 1/2 cup of raisins,

  • 1 small onion,

  • 3/4 cup cassava flour (or almond flour),

  • 1/2 of cup chopped bacon,

  • 2 tbsp of olive oil,

  • herbs and vegetable of your preference to decorate


How to prepare:

  1. Season the chicken with pepper, 1 tsp of salt, 1 tsp of paprika and 3 tbsp of salted butter. Put aside.

  2. Now prepare the stuffing by sautéing the bacon, onions, raisins, minced garlic, and shredded carrots with butter and live oil.

  3. Add the cassava flour (or almond flour to to the mixture. Wait until it cools down.

  4. Now stuff the chicken with the stuffing.

  5. Roast the chicken for one hour and half or until it is done at 350F.

  6. Once the chicken is done, remove the stuffing and serve with white rice or a salad.
