Let's make an American-classic: Pecan Pie
Here is What You Will Need:
1 1/2 cups of chopped pecans
1/2 of cup whole pecans to decorate
1 cup of corn syrup
1/2 of cup brown sugar
1/4 teaspoon of salt
1 teaspoon of cinnamon
1 tablespoon of vanilla extract
4 eggs
1/4 cup melted butter
2 tablespoons of flour
For the dough
1 1/2 cups of flour (I used King Arthur Gluten Free Flour) but you can use regular flour
1 egg
1 tablespoon of sugar
1/4 teaspoon of salt
3 to 5 tablespoons of ice water
How to prepare:
Start by making the dough:
In a food processor add the flour, salt and sugar and pulse for about 2 seconds. Now add eggs and butter. Beat for 1 minute. While is beating, add the water, 1 teaspoon at a time or until everything incorporates. Pour the dough on a clean surface and form into a ball. Wrap in plastic wrap and leave in the refrigerator for 30 minutes to an hour.
Take the dough out of the refrigerator and start flattening the ball into a disk with the roller. Pour over a 9” round pie pan.
With your hands press the dough into the pie pan as shown in the video. Poke holes in the dough with a fork to release the air.
Take the dough back into the refrigerator for about 15 to 30 minutes.
Put a pie weight or beans on top of the dough and bake at 415°F for 14 minutes.
In the meantime, let’s prepare the filling:
Into a bowl, add eggs, corn syrup, vanilla, butter, brown sugar, cinnamon, salt, flour and mix well.
Remove the crust from the oven and add the pecans.
Pour the liquid mixture and bake for about 45 minutes to an hour at 350°F.
Let the pecan pie cool down for at least 2 hours before serving.
