Gnocchi




Another great recipe from Flavors of My Roots!

Here is what you'll need:

  • 4 ½ lbs Red Potatoes

  • 2-4 Cups Flour

  • 2 Eggs

  • 1 Teaspoon Nutmeg

  • ½ Teaspoon Black Pepper

  • Salt, to taste

How to prepare:

  1. Bring a large pot of salted water to a boil

  2. Peel the potatoes and add to the boiling water, cook until tender but firm; drain and let them cool

  3. Mash potatoes with a fork or potato masher

  4. Add eggs, salt, black pepper, nutmeg, and flour, mix well

  5. Knead until the dough forms into a ball

  6. Shape small portions of the dough into long snakes on a clean, floured surface

  7. Cut snakes into about ½ inch pieces

  8. Bring a large pot with salted water to a boil

  9. Drop the gnocchi in and cook for about 3 minutes or until the gnocchi has risen to the top

  10. Drain and serve with your favorite sauce
