Here is what you'll need:
4 ½ lbs Red Potatoes
2-4 Cups Flour
2 Eggs
1 Teaspoon Nutmeg
½ Teaspoon Black Pepper
Salt, to taste
How to prepare:
Bring a large pot of salted water to a boil
Peel the potatoes and add to the boiling water, cook until tender but firm; drain and let them cool
Mash potatoes with a fork or potato masher
Add eggs, salt, black pepper, nutmeg, and flour, mix well
Knead until the dough forms into a ball
Shape small portions of the dough into long snakes on a clean, floured surface
Cut snakes into about ½ inch pieces
Bring a large pot with salted water to a boil
Drop the gnocchi in and cook for about 3 minutes or until the gnocchi has risen to the top
Drain and serve with your favorite sauce
