Chicken Soup with Mint




The perfect soup for a cold day!

Here is what you'll need:

  • 1 Whole Chicken, cut, seasoned with turmeric, cumin, smoked paprika, garlic, salt, and pepper

  • 4 Tablespoons of Olive Oil

  • ½ Cup Cilantro

  • ½ Cup Scallions

  • 2 Small onions

  • 2 Cups Carrots, cut

  • 1 Cup Rice

  • ½ Cup Mint

  • 10 Cups Chicken Stock

  • 20 Cups Water

How to prepare:

  1. Start by sautéing the chicken in olive oil for about 10 minutes

  2. Add onions, cilantro, and scallions and sauté for another 5 minutes

  3. Add chicken stock and water, cook for 1 – 1 ½ hours

  4. Add the rice and cook for 15 minutes

  5. Add the carrots and cook for another 15 minutes

  6. Add the mint, stir, and serve!
