The perfect soup for a cold day!
Here is what you'll need:
1 Whole Chicken, cut, seasoned with turmeric, cumin, smoked paprika, garlic, salt, and pepper
4 Tablespoons of Olive Oil
½ Cup Cilantro
½ Cup Scallions
2 Small onions
2 Cups Carrots, cut
1 Cup Rice
½ Cup Mint
10 Cups Chicken Stock
20 Cups Water
How to prepare:
Start by sautéing the chicken in olive oil for about 10 minutes
Add onions, cilantro, and scallions and sauté for another 5 minutes
Add chicken stock and water, cook for 1 – 1 ½ hours
Add the rice and cook for 15 minutes
Add the carrots and cook for another 15 minutes
Add the mint, stir, and serve!
