Chicken Cognac Stroganoff




Another great recipe from Flavors of My Roots!

Here is what you'll need:

  • 2-3 Tablespoons Olive Oil

  • 2.5 lb Chicken Breast, cubed, seasoned with 1 key lime, garlic, salt and pepper to taste

  • 1 shot Cognac

  • 1 Cup of Chopped Onions

  • 1 Cup of Chopped Tomatoes

  • 1 Tablespoon of Ketchup

  • 1 Tablespoon of Mustard

  • 1 Teaspoon of Oregano

  • ½ Cup of Cilantro or Parsley

  • ½ Cup of Fresh Whipping Cream

How to prepare:

  1. Start by sautéing the chicken in olive oil for 3-5 minutes

  2. Add the cognac and onions and sauté for another 2 minutes

  3. Add the tomatoes and sauté for an additional minute

  4. Add the ketchup, mustard, oregano, and cilantro

  5. Cook for another 5 – 10 minutes

  6. Lower the heat and add the cream

Best served with salad and rice. You can add mushrooms or corn, if desired.
