Another great recipe from Flavors of My Roots!
Here is what you'll need:
2-3 Tablespoons Olive Oil
2.5 lb Chicken Breast, cubed, seasoned with 1 key lime, garlic, salt and pepper to taste
1 shot Cognac
1 Cup of Chopped Onions
1 Cup of Chopped Tomatoes
1 Tablespoon of Ketchup
1 Tablespoon of Mustard
1 Teaspoon of Oregano
½ Cup of Cilantro or Parsley
½ Cup of Fresh Whipping Cream
How to prepare:
Start by sautéing the chicken in olive oil for 3-5 minutes
Add the cognac and onions and sauté for another 2 minutes
Add the tomatoes and sauté for an additional minute
Add the ketchup, mustard, oregano, and cilantro
Cook for another 5 – 10 minutes
Lower the heat and add the cream
Best served with salad and rice. You can add mushrooms or corn, if desired.
