Here is what you'll need:
4 Tablespoons Olive Oil
4 Cloves of Garlic, minced
½ Small Onion
½ Small Bell Pepper
1 Cup of Fresh Corn, cooked
2 Small Tomatoes, chopped
1.5 lb of Chicken Breast, shredded
Salt and Pepper, to taste
2 Tablespoons of Cilantro
2 Tablespoons of Scallions
2 Tablespoons of Catupiry Cheese
2 Tablespoons of Requeijão
2 Tablespoons Cream Cheese
For the crust:
4 Eggs
¾ Cup Coconut Oil
1 Cup Milk
¾ Cup Parmesan Cheese
2 ½ Cups Tapioca Flour
2 Tablespoons Flour
1 Tablespoon Baking Powder
How to prepare:
Start by cooking the chicken breast in the pressure cooker for about 30 minutes
Wait to cool down ad shred with a fork, set aside
Sauté the minced garlic for about 1 minute, add onion and sauté for 3 minutes
Add bell pepper, corn, and tomatoes, mix well
Add the shredded chicken, salt and pepper, scallions, parsley and cilantro, sauté for about 5 minutes
Add the cheeses and mix well, set aside
Now make the pie crust:
Add the eggs, milk, coconut oil, parmesan cheese, tapioca flour, and flour together and blend for about 2 minutes
Put the batter into a large bowl and add the baking powder, mix well
Add the batter into a baking pan coated with butter and pour the chicken mixture on top, spreading it evenly
Bake for about 45 minutes
