Roasted Duck Served with Nutty Rice and Mushroom Pistachio Farofa



Let's prepare another delicious recipe, specially enjoyed by Brazilian families during the Holidays...Enjoy!


Here is what you'll need:

  • 1 whole duck

  • 2 green apples

  • 1 small onion cut in fourths

  • 1 tablespoon of olive oil

  • 1 tablespoon or honey

  • 2 tablespoons of orange juice

  • Zest of 2 oranges

  • Salt and pepper to taste

  • 2 cloves of minced garlic

How to prepare:

  1. Start by cutting extra neck skin from the duck and removing giblets from inside the duck. Rinse the duck inside and out and pat dry with paper towel. Put aside.

  2. In a small bowl add the honey, olive oil, orange zest, garlic salt and pepper and mix well. Season the duck inside and out with this orange zest mixture.

  3. Stuff the duck with the onions, green apples and rosemary.

  4. Tie the duck legs with a butcher twine as shown on the video.

  5. Poke the duck breast a couple of times with a fork.

  6. On a roasting rack, inside a roasting pan place the duck breast side up and roast for 20 minutes at 450°F.

  7. After the 20 minutes lower the temperature to 300°F and leave it there for 2 hours.

  8. Once the duck is done roasting, remove out of the oven and set aside to cool down for about 45 minutes.

*If you are using frozen duck, make to to leave inside the refrigerator for at least 2 days to defrost.
